DOLCEFORTE TRUFFLES - inspired by the traditional Tuscan “cinghiale in dolceforte”
I invented this new dish for the Meatball Challenge 2012 in Calgary and Banff National Park, teaming up with Christopher E. Weder, from Spirit View Ranch in Rycoft who provided me with a special Black Angus beef. We got the 2nd place!
